food Under reviewDietary fat is one of the three primary macronutrients, alongside protein and carbohydrate, and serves as a dense source of energy, providing more than twice the calories per gram compared with the other macronutrients. Fats are a class of lipids that do not dissolve in water and include several subtypes, primarily saturated fats, trans fats, monounsaturated fats, and polyunsaturated fats. These different types are defined by their chemical structure, particularly the number and type of bonds in their fatty acid chains, which determine whether they are solid or liquid at room temperature and how they behave biologically. In the human body, dietary fat is essential for building cell membranes, supporting brain and nervous system function, transporting fat-soluble vitamins (A, D, E, and K), and producing key signaling molecules such as hormones and eicosanoids. Monounsaturated and polyunsaturated fats, abundant in plant oils, nuts, seeds, and fatty fish, tend to support healthy blood lipid profiles and vascular function when they replace saturated and trans fats. Saturated fats, common in animal products and tropical oils, and industrial trans fats, found in some processed foods, are more strongly associated with adverse cardiometabolic outcomes when consumed in excess. From a practical health perspective, dietary fat is not simply “good” or “bad” but must be considered in terms of type, amount, and overall dietary pattern. Diets that emphasize unsaturated fats from whole foods and limit saturated and trans fats are generally associated with better cardiovascular health, improved metabolic markers, and potentially reduced long-term risk of chronic diseases. At the same time, total fat intake needs to be moderated because of its high energy density, which can contribute to weight gain when energy intake exceeds expenditure.
Research summary
Research on dietary fat in healthy humans has shifted from a simplistic focus on lowering total fat to a more nuanced emphasis on fat quality. Prospective cohort studies and meta-analyses indicate that higher intakes of unsaturated fats, particularly polyunsaturated and monounsaturated fats, are associated with lower all-cause, cardiovascular, and cancer mortality, while higher intakes of saturated and trans fats are associated with increased risk. Controlled feeding trials also show that diets relatively high in well-balanced unsaturated fats can improve body composition, inflammation, and vascular function in overweight but otherwise generally healthy adults. The current consensus in major guideline bodies is that unsaturated fats should provide a meaningful proportion of daily energy, while saturated fat should be limited to a modest fraction of calories and trans fats should be minimized or eliminated. Within this framework, dietary fat is viewed as a necessary and beneficial nutrient when consumed primarily in unsaturated forms and as part of an overall healthy dietary pattern rich in fruits, vegetables, whole grains, and lean protein sources.
